If you had told me 5 years ago that I would be featuring a wine from Canada — a Chardonnay no less — I would have been skeptical at best. However, that was before I was introduced to Tawse Winery, located on the Niagara Peninsula in Ontario. I have come to think of Tawse as the DRC of Canada, the Crown Jewel in the country's emerging wine industry: it was recognized as Winery of the Year in Canada in 2010, 2011, 2012 and 2016! When I first tasted the wines, I was mesmerized by their purity, tension and ability to reflect the unique terroir the grapes are grown in. But it was their Chardonnay that really caught my attention. Crisp, vibrant and undeniably delicious, it was an eye-opener that made me re-evaluate how I thought about Canadian wine. | Canada's Finest Tawse Winery was founded by Burgundy lover, Moray Tawse, in 2000, when he realized that the Niagara Peninsula has the ability to create world-class wines. After an initial purchase of 6 acres of vines, Moray now holds over 200 acres over 5 different vineyards growing Chardonnay, Pinot Noir, Riesling, Cabernet Franc, Gewürztraminer, Gamay and small amounts of Pinot Gris and Syrah. All the Tawse vineyards are certified organic and biodynamic, as the team at the winery firmly believes that great wine quality begins in the vineyard. In 2005, Tawse opened a state-of-the-art winery, complete with a six-level, gravity-flow design, geo-thermal system and a wetland bio-filter. Vineyard Manager and Winemaker Paul Pender is dedicated to producing terroir-driven wines of exceptional elegance, depth and character, utilizing traditional winemaking techniques with cutting edge technology. Moray and Paul have certainly succeeded in becoming the leading organic/biodynamic estate in Canada, making consistent, top-notch terroir-driven wines from one of the world's premier emerging wine regions.

2015 Tawse Chardonnay The 2015 Tawse Chardonnay is fermented and aged in French oak barrels, but at no point does the oak seem intrusive or over-powering. In fact, it is the balance and integration of oak that is just one of the impressive and delicious aspects of this wine. In the glass, the wine sits a brilliant clear lemon color with green reflections. On the nose, aromas of fresh butter, floral blossoms and just-ripe orchard fruits slowly and delectably entice the senses. After a few swirls of the glass, a delightful sea-spray minerality emerges, adding complexity to the nose. On the palate, this Chardonnay has a firm, integrated acidity that gives verve and energy to the creamy white peach and Bosch pear fruits that are kissed with a subtle sweet spice and mineral streak, imparting an extra richness and depth of flavor. The finish is long and captivating. The Tawse Chardonnay is an excellent example of cool-climate Chardonnay and the quality that Canadian wines can attain. Enjoy alongside grilled sea scallops with corn, peppers and tomatoes or fluke in a beurre blanc sauce. |
