Domaine du Moulin - Gaillac Blanc 2022
The Hirissou family has been farming and making wine in Gaillac since the mid 19th century. Today, Nicolas Hirissou, the sixth generation of the family, runs Domaine du Moulin after taking over from his parents in 2002. The domaine consists of 38 hectares of practicing organic viticulture on two main soils types: clay-limestone and gravel. Nicolas' focus is on producing exceptional terroir wines that promote his belief Gaillac can grow some of the most exciting and distinctive wines in the world.
Domaine du Moulin's Gaillac blanc is a blend of 80% Ondenc and 20% Sauvignon Blanc grown in chalk-clay soils. All grapes are hand-harvested and fermented with native yeasts in stainless steel tanks.
