The Girardin family has been present in Burgundy since 1570, practicing polyculture farming up until the end of WWII. It was then that the family decided to specialize in the cultivation of vines. Subsequently, the family began to acquire plots from some of the best and most renown terroirs in the Côte de Beaune. Today, the seventeen-hectare estate is run by Justin Girardin, the 13th generation, who has been in charge since 2013. Justin combines his family's traditional know-how that has been handed down through the generations and his wine experience outside of Burgundy to bring new life and vision to the estate's winemaking. Justin practices organic and biodynamic farming methods through his vineyards and believes that winemaking is a process where the vine, the earth, the sky and the winemaker must work together to make great wine.
Justin Girardin's Chassagne-Montrachet rouge — 100% Pinot Noir — pours a hypnotic ruby red emitting a ripe bouquet of red berry fruits kissed with spice. One sip is all you need to be dazzled by this wine's finesse and concentration. The palate is full of cherry and raspberry flavors intertwined with notes of spice and a touch of dry herbs. There is a delightful balance of bright acidity and soft tannins that help guide you to a deliciously, long finish. Try with baked mushrooms stuffed with crabmeat or veal milanese.
