Palmento Costanzo was established in 2011 by Sicilian couple Mimmo Costanzo and Valeria Agosta. A palmento is a traditional Sicilian winemaking structure, though most have been converted into storage facilities or restaurants. However, Palmento Costanzo is located on the north side of Mount Etna in the Mount Etna National Park and had remained untouched as a protected historical structure. After acquiring the palmento in 2010, Mimmo and Valeria set to renovating the building and the surrounding vineyards with their first harvest coming in 2011. Today, the couple cultivates 18 hectares of vines, assisted by their daughter, Serena, who is completing her viticultural and oenological studies. The estate's vineyards are planted to Nerello Mascalese and Nerello Cappuccio for the reds and Caricante and Catarratto for the whites, all in the mineral-rich, blackish brown soils of volcanic sands and rock. Some of the property's vines are pre-phylloxera with upwards of 120 years of age.
Palmento Costanzo's Mofete rosso — a 80/20 blend of Nerello Mascalese and Nerello Cappuccio — is fermented in stainless steel with indigenous yeasts, then aged for one year in 50% steel and 50% oak barrel, followed by a year of bottle conditioning. Medium ruby in color, this rosso offers a delightful bouquet of macerated raspberries and cherries mixed with notes of allspice, dried flowers and ash. The palate is full of ripe, round fruit... red berries enveloped by a light, focused acidity and soft tannins. The finish is long, dry and elegant. Pair with bucatini with tuna, tomatoes and olives or Mexican stew with pork, sausage and beans.
