Guido Rizzotto has dedicated his entire life to tending vines and making wines in Soave Classico. Today, his daughter, Laura, guides the vines and the wines, crafting some of the most pure expressions of Garganega. All vines are grown organically and the family is especially proud of their beekeeping activities, which help protect the biodiversity of their vineyards. Laura says the secret to her vibrant, mineral white wines are the basalt soils that her old vines of Garganega are rooted in. Balsalts are volcanic rocks from a series of eruptions millions of years ago. These black rocks, mixed with a layer of white limestone from an ancient inland sea, provide a solid bedrock upon which growers like Laura and her family can produce truly astounding white wine. Laura maximizes the potential of her vines by farming 100% organically, with no added chemicals, creating healthy vines that release that tension and electric current of flavor and minerality found deep within the soils into her Soave Classico.
Balestri Valda is a striking example of the quality that can be found in the Soave Classico. Made from 100% Garganega with a straw-yellow color, this gorgeous wine emits pristine aromas dominated by a medley of white flowers and lemon peel. The mid palate is concentrated with flavors of green apple, pear and brioche with note of white almonds that extends all the way through the long, mineral finish. It is wonderfully fresh white wine, full of the tension and electric current that Soave Classico wines impeccably demonstrate when vines are farmed properly and the wine is well made. Enjoy with anything from the sea or simple pasta preparations with spring vegetables.
