Ostinato - Fine Ambra Secco Marsala NV
Baglio Baita Alagna is one of the only Marsala producers to make wine from estate vineyards. Founded in the early 1940s by Giuseppe Alagna, the estate consists of 50 hectares of old-vine Grillo, Inzolia and Catarratto in the Marsala, Marzara and Salemi communes. All vines are farmed organically without irrigaiton. Third-generation winemaker Ercole Alagna produces alto grado (base wine) Marsala that are aged — in the family cellars located nearly 35 meters underground — in large Slavonian and American oak barrels. Ostinato Marsala is Marsal made with the traditional methods by focusing on the vineyards: Work begins in the sand and limestone ‘tufa’ vineyards, with lower yields and later harvests producing an alto grado base wine that enables a greater vinous expression, less reliant on mosto cotto (grape syrup), sifone (a mixture of grape syrup and alcohol) and fortification. The results are wines with a vinous character and unusual complexity.
The Ostinato Fine Ambra Secco is a dry Marsala produced from late harvest Grillo, Inzolia and Catarratto and aged for 1+ year in barrel. Since the alto grado grapes are late harvest, their high natural ABV means the wines do not need as much mosto cotto or sifone, and thus express the underlying Marsala terroir better. Enjoy with dry-cured meats and a wide variety of cheeses, including Robiola, Taleggio and Pecorino or with classic dishes like veal or chicken Marsala or Saltimbocca with sautéed mushrooms.
