Flying Cloud is the second label of Stephen Ross, run by Stephen Ross Dooley and his wife, Paula, launched in 2003. These wines came about from a realization that there is a market for excellent, value-driven wines. The name "Flying Cloud" is an homage to Ross's upbringing in Minnesota, and is the name of a small airport in Eden Praire, MN.
Flying Cloud's Paso Robles Cabernet Sauvignon pours a deep ruby in the glass. Intense aromas and flavors of black currant and rich warming spices waft from the glass and cascade across the palate. The wine is medium bodied with rich tannins and a long, spicy finish. Pair this wine with veal chops and roasted eggplant.
