Jason and Hilary Driscoll are the couple behind Driscoll Wine Company. The proud first-generation vintners manage two labels: Hibou and Tilth. Jason is the winemaker; Hilary handles the business end. Jason had his sights set on becoming a chef, but his passion was soon diverted when he fell in love with the wine industry. While staging at a number of restaurants, Jason earned a living by working at a few wineries as a cellar hand and eventually, assistant winemaker. He learned hands-on at several stops, and with winery hours being more conducive to raising a family than those of the restaurant business, the couple decided to start their own label.

Tilth Wines features a lineup of very reasonably priced, handcrafted wines made from fruit sourced from sustainable vineyards in Napa Valley, Lodi, Contra Costa, Mendocino, and Sonoma's Russian River Valley. The lineup includes Sauvignon Blanc, Zinfandel, Chardonnay, Carignan, Syrah, and Pinot Noir: all fermented with as little intervention as possible, all aged in some new, mostly old oak barrels.

The Tilth Pinot Noir is sourced from three vineyards in Sonoma County: Tina Marie Vineyard (Russian River Valley AVA, Sonoma Coast AVA, Green Valley of Russian River Valley AVA), Petaluma Gap Vineyard (Sonoma Coast AVA) and Riddle Vineyard (Russian River Valley AVA). Each vineyard is vinified separately with 30% whole clusters, then aged in 20% new French oak for ten months before bottling. The wine pours a deep ruby red with garnet highlights. Tilth's Pinot has a dynamite nose, filled with bright red and sour cherry aromas kissed with hints of rose petal. The palate is medium-bodied — yet elegant — with fresh cherry fruit flavors tinged with a subtle spice note that comes from the whole clusters. The finish is long and refreshing. This wine is stellar on the table... Try with a spring vegetable risotto, lemon and dill-poached salmon or grilled pork chops with a creamy mushroom gravy.
