Domaine Berthet-Bondet began in 1984 when Jean Berthet-Bondet and his wife, Chantal, purchased 10 hectares of vines spread in and around the Château-Chalon appellation in the Jura. The estate is located in the foothills of the Alps near the Swiss border. The domaine made their first vintage in 1985 with an old barn housing the vats and a 16th century cellar holding the wines. Jean and Chantal grow the local white grape Savignin, the local red grapes Trousseau and Poulsard and the more well-known Chardonnay and Pinot Noir, creating a wide range of wine styles.
The Cotes du Jura Vin de Paille is a blend of Chardonnay, Savagnin and Poulsard. The grapes are left to dry on racks in a specially designed drying room for about three months. After the drying period, the grapes are pressed, fermented and aged for three years in barrel. The resultant wine is rich and flavorful with notes of dried stone fruits and jams. It can be aged for over 20 years and is best served with foie gras, fruit based desserts or as dessert on its own.
