David Moret is the name that always comes to mind when I think of the top producers of white Burgundy. He works exclusively with Chardonnay in the Côte de Beaune and Côte Chalonnaise, crafting wines that show the delicate nuances and elegance of this grape. David has always been true to the terroir he works, using biodynamic practices and an exceedingly careful approach not only in the vineyard, but in the cellar as well, creating wines that are true expressions of the land from which they came. He ferments and ages all his wines in French oak barrels, imparting a depth and concentration seldom seen outside a handful of great producers. I have always marveled at how he is able to combine this intensity with his emphasis on precision, tension, minerality and freshness. It is a balancing act even the most accomplished tightrope walkers would envy!
David's Saint-Romain Blanc is made from 100% Chardonnay vines that are 50-60 years old grown on clay-limestone soils. The grapes are fermented and aged (for 12 months) in French oak barrels (25% new barrels) with full malolactic conversion. Pale gold color with wonderful aromas of lemon curd, fresh butter and butterscotch with a balanced acidity, creamy mouthfeel and mineral spine that flow into refreshing, powerful finish.
