Château de Vaux is located in a tiny AOC called Moselle, just over the Vosge mountains from Alsace near the border with Luxembourg (this is France's most northerly appellation). In September of 1999, Marie-Geneviève and Norbert Molozay purchased the Château de Vaux and consolidated their vineyards, restored the cellar and improved farming and winemaking techniques. As a result of their hard work, Marie-Geneviève and Norbert brought the Moselle wine producing region back to life. The estate has been certified organic since 2014 and all the wines are vegan.
The Château de Vaux Les Grypheés Blanc is a blend of 30% Auxerrois, 30% Müller-Thurgau, 30% Pinot Gris and 10% Gewürztraminer grown on rocky, hillside terraces west of the Moselle River with clay-limestone soils. Each grape variety is harvested separately and vinified in stainless steel tanks at low temperature, then blended together in February. Les Gryphées displays notes of peaches and white flowers on the nose with a beautifully concentrated ripe stone fruit and floral notes on the palate, leading into a refreshing and elegant finish. Enjoy with alpine cheeses or Friture de la Moselle, a Luxembourg dish of assorted fried freshwater fish.
