Château Cavalier is an estate dedicated exclusively to the production of rosé in the heart of Provence on 132 hectares of contiguous vineyards in the foothills of the Massif des Maures in Vidauban, in the Var. The name of the Château comes from the stream that flows through the property, Cavalier, which contributes natural irrigation to the vines, which ripen slowly during the cool summer nights. All the wines are fermented using native yeasts, adding to the expression of the terroir. Since 2012, the property has been certified Terra Vitis for sustainability, and all facets of the business are designed to respect the people, environment and the vineyards.
The Cuvée Marafiance — a blend of Grenache, Syrah, Cinsault, Rolle, Sémillon and Cabernet-Sauvignon — is specifically designed to be enjoyed with food. The idea of an all-rosé estate, especially one that emphasizes the culinary glory of rosé, is a wonderful concept! For all the excitement surrounding rosé as an aperitif or cocktail, its food-pairing versatility is shamefully overlooked, and Château Cavalier is an absolute star on the dinner table. The wine is the palest rose color, highlighted with hints of sky blue. The nose is refined and expressive with notes of cantaloupe, honeydew melon and ripe citrus with subtle floral and spice notes. On the palate, the Cuvée Marafiance showcases excellent structure and finesse, carrying those wonderful fruit flavors over a delicate acidity into a mineral-laden finish.
