For Johannes Zillinger, organic farming and winemaking has been part of his life since he was a young child. His father, Hans, taught him how to view the vineyard as a habitat to protect instead of poison. Hans started practicing organic viticulture in 1983, two years before Austria's Anti-Freeze scandal. At the time, Hans was a pioneer in Austria for the adoption of organic farming and winemaking. When Johannes took over the winery and made it his own in 2013, he took it ever further and became biodynamic, starting a new chapter for the 350 year old winery. His wines are certified Demeter biodynamic; Johannes grows his own herbs for tea tinctures to use as treatments in his vineyards. His commitment to a natural, minimalist approach to farming and winemaking — all wines are spontaneously fermented, lightly filtered, and minimally sulfured only at bottling — has resulted in extraordinary clean wines that are true expressions of the grapes they are made from.
This wine is Johannes Zillinger first ever Pet Nat, a bone-dry blend of 85% Grüner Veltliner and 15% Riesling. The Grüner Veltliner is aged on its lees in steel, the Riesling is in 600L wood barrels. Half the juice is from the 2018 vintage, half from 2019. The 2018 fruit was fermented separately and then combined with the 2019 in a solera. The second fermentation occured in bottle, when new juice was added to wine from the solera, resulting in gentle and persistent bubbles. At only 10.5% alcohol, this is an extremely quaffable bubbly with a distinctive salty, sourdough flavor profile with a combination of tart apple and white peach notes. Perfect to enjoy on a warm sunny day along side a plate of assorted cold cuts.
