The Rodríguez family has been growing grapes and making wine in Ribiera Sacra for generations, though it wasn't until 1991 that the family started their own Adega. Today, Pedro Rodríguez runs their estate, Guímaro — a local Gallego word that means rebel, and the nickname of Pedro's grandfather. Working closely with the famous Bierzo winemaker Raúl Pérez, Pedro farms his old-vine Mencía, Godello and other local varietals organically on the treacherously steep slopes along the River Sil. He utilizes old-fashioned winemaking techniques: wild yeast fermentation, foot-treading in open-top containers, low sulfur and aging in used barrels. The results are expressive and terroir driven wines with energy, freshness and complexity.
The Guímaro Tinot is made from 100% Mencía from multiple plots in and around Amandi — the top sub-zone of Ribiera Sacra — with an average age of 40 years-old, on soils of slate, granite and sand. The wine is unoaked, showcasing the aromatic purity and zest of the grape and terroir. Brimming with lush red fruits and a supple texture, the Guímaro Tinto is an refreshing, easy to drink red that is delicious on its own though also extremely versatile on the table.
