Clos Padulis, established in 2013, is located in the small village of Paziols in Languedoc. Owner and winemaker Thierry Billes has farmed his 12.5 hectares of vines organically since his estate's inception. The name of the property is derived from the historic name of Paziols, where Thierry can trace his family's history back to the 16th century. The estate specializes in AOC Fitou rouge crafted from Thierry's Carignan, Syrah and Grenache vines that grow in soils of clay and limestone. Thierry is a one-man show, attending to every task by hand from vine care to harvesting to the cellar to bottling.
The Padulis Fitou Rouge — composed of 50% Carignan, 30% Syrah and 20% Grenache — sits in the glass a bold purple with ruby reflections. This rouge offers seductive aromas of dark berry and stone fruits tinged with spice. The palate is full and lush, displaying ripe flavors of juicy plum, black cherry and cassis accented with hints of baking spice and tapenade. This wine is well-structured with mouth-coating, fine-grained tannins that guide you to a long, luscious finish. Enjoy with braised veal shanks or grilled London broil.
