Thymiopoulos Vineyards Earth & Sky 2022
The Thymiopoulos family has owned vineyards in Naoussa for several generations, though it wasn't until early 2005 that Apostolos Thymiopoulos began making wine from estate fruit. Focusing primarily on Xinomavro grown in the family's organic vineyards, Apostolos has become one of Greece's superstar winemakers, crafting a style of Xinomavro that tames the grape's wild tannins while providing purity and intensity of fruit. His first wine, Earth and Sky, became a benchmark for high quality Xinomavro in Naoussa. He continues to champion indigenous Greek varietals while also helping farmers understand that viticulture is a meaningful vocation, one that instills a sense of pride in growing grapes.
Earth and Sky is 100% Xinomavro made from a blend of the estate's best parcels on limestone with schist and clay top-soil. The grapes are from 44 year-old certified organic vines, 70% from around Trilofos village, 30% from the surroundings of Fytia village. Grapes are 60% de-stemmed, macerated for 40 days and fermented with indigenous yeasts, then aged 18 months in third-use, 500-litre French oak barrels. The result is the most revered expression of Xinomavro in not only Naoussa, but all of Greece: A classic not to be missed.
