Shypoke calls the Calistoga AVA home. Their estate vineyard is located in the north-western corner of Napa Valley. The dirt to bottle history began in 1904, when Peter Heitz' great-grandparents immigrated from Alsace and literally planted roots and built bonded winery #103 for the production of fine wines. Through five generations of grape growers and winemakers, the Heitz family has continued the vision and efforts begun in 1904. Each wine honors the traditions of a family working together, to farm heirloom vines and to hand craft the resulting fruit into uniquely elegant and honest wines of place and vintage.
This is old school Napa Cab, the way it was made in the 60’s, 70’s and 80’s, before masses of fruit, new oak and extraction became the norm. The aromas are pristine and clean with gorgeous purity of fruit mingled with a restrained use of French oak and an intriguing minerality. On the palate, the wine displays elegance and finesse with a firm acidity and rigid tannins that frame all the wonderful, complex flavors in the right place. The finish is delectable and minutes long, inviting you gradually back for another sip after processing the wonder just enjoyed. Drink now, but this wine will age beautifully for 10+ years.
