Domaine de Martinolles is owned and managed by native Languedocoen vigneron, Jean Claude Mas, though the estate has been cultivated to vine since 1531, when the monks of Saint Hilaire produced the world's first sparkling wine. The Limoux wine region is at the westernmost point of the Languedoc, located just south of the medieval city of Carcassonne. It has a unique microclimate due to the dual influences of the Atlantic, which brings cool and wet weather, and the Mediterranean, which delivers hot and dry conditions. Vines are worked traditionally without herbicides or fertilizers and the estate is a member of Terra Vitis, an organization that certifies the practice of sustainable agriculture.

Le Berceau translates to "the cradle" which references that Limoux is the birthplace of sparkling wine. This wine is crafted using the Methode Traditionnelle, or the Champagne method, which see a secondary fermentation in the bottle. Martinolles' Blanquette de Limoux is kept for a minimum of nine months on the lees before being disgorged.
