Jean-Pascal Aubron — fourth-generation winemaker — runs his eponymous estate in Vallet, just outside of Nantes. The estate was founded by Jean's great-grandfather in 1875 with 11 hectares of vines. Since Jean took over in 1983, he has increased the family's holding to 84 hectares, grown on calcareous clay, sand and stony soils. Jean's goal is to make bone-dry Folle Blanche, Muscadet and Sauvignon Blanc. Spontaneous fermentation takes place in stainless steel tanks and is pushed to its limits, resulting in wines with zero residual sugar that are dry and crisp with high acidity and tremendous aging potential. Minimal amount of sulfur is used with slight fining and filtering.
Jean Aubron's Folle Blanche is crafted from vines averaging 30 years of age. In the glass, this wine displays a bright lemon yellow color with silvery green highlights. The nose is full of citrus-kissed, white orchard fruits with notes of white flowers. The palate is clean, delicate and lively exhibiting flavors of Granny Smith apples and Asian pear. There is a delightful marriage of vibrant acidity and saline minerality that help carry this refreshing white to pleasingly zesty finish. Perfect with seafood or lighter chicken dishes.
