Stratum Wines is a small project created by Bodega Cerrón in Jumilla. Stratum is run by siblings, Carlos, Juanjo and Lucía, the fourth generation of the winemaking Cerdán family. The family organically and biodynamically farms approximately 30 hectares of high-altitude, ungrafted vines, mostly Monastrell, on calcareous soils. Their farming was certified organic in 1989 and were certified biodynamic by Demeter in 2021. Their work in the cellar is low-intervention in style, employing only spontaneous fermentations with native yeasts and a judicious use of sulfur at bottling. Their well-balanced wines express a sense of place with pure fruit and vibrant minerality.
Stratum’s La Servil is 90-95% Monastrell with a small amount of Moravia Agria, Blanquilla, Forcallat, Bobal and Rojal from selected vineyards of 70+-year-old own-rooted vines. The wine is fermented and aged in French oak for more that a year, before being bottled without fining or filtering. La Servil is intensely aromatic with a brooding nose of ripe dark red fruits accented with notes of dried herbs, spice and crushed rock. The palate is surprisingly fresh with load of black cherry and blackberries flavors mixed with notes of black pepper and cocoa powder. Ripe tannins help guide this lovely red to a long, complex finish. A wonderful pairing for grilled red meats, especially barbecue.
