Château Canon — established in 1760 — is located in the heart of Saint-Émilion. The estate is comprised of 21.5 hectares planted to Merlot and Cabernet Franc in soils of limestone and clay. In 1996, the property was acquired by the Wertheimer family who also owns the world-famous fashion house Chanel. After the purchase, the family invested in major renovations in the vineyards and the cellar. Vinification is traditional for up to twenty days in large, temperature-controlled wooden vats before an eighteen-month maturation in oak barrel (70% new).
The Château Canon pours a deep ruby red with garnet reflections. This wine is incredibly expressive on the nose, offering pure aromas of red and black berry and stone fruits accented with notes of violets, herbs and spice. The palate showcases the impeccable balance between the wine’s powerful intensity and its plush and supple mouthfeel, while flavors of blackberries, plums and black cherries meld with hints of bittersweet chocolate and espresso. The enduring finish is complex and persistent. Enjoy with beef tenderloin with veal demi-glace or sliced roast of lamb with gratin Dauphinois.
