Domaine Michel Gay et Fils was established in 1992 when Michel and his brother François decided to split their century-old familial estate and go their own ways. The Chorey-lès-Beaune property started at 5.5 hectares and has grown to ten hectares at present, planted to Pinot Noir, Aligoté and Chardonnay with an average age of 40 years. Today, the estate is run by Michel's son, Sébastien, a fifth-generation winemaker. Sébastien took over after his father retired in 2001 and immediately began renovations and improvements. In 2003, he converted the vineyards over to an organic approach (though without certification). Grapes are harvested and sorted manually through a strict process, ensuring only the best fruit makes it to fermentation. Even then, Sébastien will only bottle what he believes lives up to the standards of his family name and sells off any that do not to négociants.
Michel Gay et Fils' Chorey-lès-Beaune displays a bright ruby in the glass with a delightful perfume of red and black berry fruits mixed with hints of licorice and garrigue. On the palate, this Pinot is light, yet rich and full of character. Well-rounded, the attack is packed full of cherry, raspberry and blackberry flavors that are supported by vibrant acidity and mellow tannins that help the wine coast to a long and seamless finish. Pair with charcuterie, caramelized mushroom and goat cheese flatbread or Mexican street tacos.
