Yves Falmet, who is originally from the Côtes de Bar in Champagne, owns 25 contiguous hectares of hillside vineyards in Cebazan, within the Saint-Chinian appellation in the Languedoc-Roussillon region. Yves acquired this rocky parcel planted on clay-limestone in 1996 because the other vignerons in the area had no interest in the amount of harsh and dangerous work it would take to maintain these steep hillside vineyards. He methodically recovered the vines and rehabilitated the old farm buildings into a functional winery and cellar. Before purchasing his property, Yves worked as an oenologist in Australia, California, and New Zealand. While Yves’ vineyards are located within the St Chinian appellation, his wines are all declassified into Vin de France as monovarietal wines are not allowed within the AOC.

At one time, Aramon was the most widely planted grape variety in France; today only a small amount still exists. The grapes for Yves’ 100% Aramon come from 80+ year old vines that are scattered amongst his Carignan vines. The wine is a light, satiny red in color and possesses a nose dominated by red fruits. On the palate, the Aramon is medium-bodied and delicate with fresh red fruit flavors marked with a touch of spice. There are gentle tannins and the perfect amount of acidity to carry through to the delightful finish. A great wine for vegetarian fare... Try it with falafel or grilled cauliflower steak drizzled with olive oil and fresh herbs.
