In Montbrun des Corbiéres lies the certified organic vineyards of Château Vieux Moulin, run by Alexandre They and his wife Laurence. Alexandre is the seventh generation of his family to lead the estate, which is over 200 years old, having taken over from his father in 1998. Their wines are made under the Corbiéres appellation in Languedoc. Alexandre and Laurence farm their 28 hectares organically, preserving the biodiversity and respecting the cycles and systems of nature. All their wines are fermented with native yeasts and minimal intervention.

Vieux Moulin's flagship wine is a four grape blend of Carignan, Grenache, Mourvèdre and Syrah. They are fermented in whole bunches with natural yeasts in cement vats with minimal oak and low sulfur. The wine pours a deep purple in the glass emitting aromas of red and dark berry fruit. The palate is concentrated and full with flavors of dark berry compote — blackberries and cassis — supported with savory notes of pepper and anise. Tannins are soft and balanced with a lovely acidity that delivers you to a pleasing finish. Traditional pairing is cassoulet, but this will be delicious with a hearty stew or anything off the grill, slathered with barbecue sauce.
