Tenuta San Giacomo's Timorasso is sourced from vineyards in nearby Monleale. The grapes are fermented in stainless steel, then continued to be aged in those tanks for eight months with periodic batonnage. This Timorasso pours an intense mid-gold color, emitting aromas of stone fruit and tree blossom honey. The palate is meduim-bodied and lusciously textured with flavors of peach and apricot balanced with a delightful acidity. An ideal pairing for antipasto: marinated vegetables, salumi, aged cheese... but will work well with fatty fish dishes, such as fried whole sardines or smoked trout.
