Domaine Bony Gachot is small, family domaine in Nuits-Saint-Georges run by Fabienne Bony. In the 1960's, Jean-Pierre founded the estate along with his wife, and in 2000, their daughter, Fabienne, tool control. Since she's taken over, Fabienne and her husband have increased the domaine's vineyard holdings to 6 hectares, while also negotiating contracts with growers throughout the Côtes de Nuits. In the vineyards Fabienne practices lutte raisonnée – adapting their vine treatments according to the true threat of disease, using products which respect the environment as much as possible, and only using chemical products if no other solution can be found. Traditional winemaking practices in the cellar result in wines of purity, expression and class.
Fabienne's Côte de Nuits-Villages comes from a single vineyard, Les Chaillots, which refers to stones in the local dialect. The vineyard is indeed stony, with many small rocks scattered across the surface, which provides excellent drainage for the vines, most of which are over 50 years old. This Pinot pours a mid-garnet color, emitting expressive aromas of blackberries and cherries combined with fresh earth and rocks. The palate displays a wonderful roundess, depth and texture that is impeccably balanced by a lively mineral core and firm, refreshing acidity. The finsh has plenty of length while also showing lovely panache and style. Enjoy with ham, roast pork tenderloin or baked salmon. Drink now or over the next 5 years.
