The Tommaisini family have owned their vineyards in the village of Gervasio in Palaia, Chianti since 1960, though they didn't start bottling wine under the Sangervasio label until 1994. The estate, 25 kilometers from the Thyrrenian Sea, consists of 400 total hectares, with 22 hectares of certified organic vineyards focused on the indigenous varietals of Tuscany. The family uses only native yeasts for fermentation, which occurs in concrete tanks, and the wines are made without any chemical additives.
San Gervasio's Chianti is made from 100% Sangiovese fermented in concrete tanks, then aged in concrete for six months, with a further four months in bottle. The wine shows a brilliant ruby color with intriguing aromas and flavors of wildflowers, red berries and a energetic minerality that flow into a persistent and refreshing finish.
