Sébastien Christophe is a one-man show in Fyé, a tiny commune nestled in Chablis. The domaine is young, especially by Burgundy standards, at just over 20 years-old. After graduating from enology school, Sébastien returned to Chablis, where he inherited a half-acre of Petit Chablis. Slowly, vine by vine, Sébastien built upon his initial holding until eventually he amassed 9 hectares of village-level Chablis and small plots in some of the top Premier Cru sites: Fourchaume, Montée de Tonnerre and Mont de Milieu. He farms sustainably, hand-harvests and ferments with native yeast in mostly stainless steel, except for small amounts of old wood in the Premier and Grand Crus.
The Christophe Petit Chablis sits in the glass a shimmering mid-gold color with greenish flecks. A gentle swirl releases gorgeous aromas of citrus-tinged orchard fruit layered with notes of wet stone and white flowers. The attack is racy and mineral-driven with flavors of Granny Smith apple and lemon curd accented with fresh herbs and a nutty quality. This wine possesses a fantastic combination of vibrant acidity and focused, chalky minerality that guides those flavors across the palate to a lipsmacking, saline-laced finish. Perfectly enjoyable on its own, but this Petit Chablis can be paired with anything from the raw bar, as well as an assortment of salads and hors d'oeuvres.
