In 1986, Philippe Gimonnet and Anne Gonet bottled their first Champagnes together as Champagne Gimonnet-Gonet, with the goal to produce wines of the highest quality. Phillipe and Anne started with just 5 hectares, which have since grown into 13.5 hectares, mostly in Grand Cru villages of the Côtes des Blancs: Chouilly, Cramant, Oiry, Oger and Le-Mesnil-sur-Oger. They also have smaller holdings of Pinot Noir and Meunier in the Vallée de la Marne in the villages of Bouquigny, Vincelles, Verneuil and Trélou. In 2012, their son, Charles, joined the team, and together the family works as naturally as possible in both the vineyard and the cellar to craft Champagnes of elegance, distinction and quality.
Gimonnet-Gonet's L'Éclat Grand Cru Rosé is a blend of 93% Chardonnay and 7% Pinot Noir. Gimonnet-Gonet likes their rosé with a high percentage of Chardonnay; for them, it keeps the wine zesty, pure and racy. All grapes are hand-harvested and fermented in stainless steel tanks, the wines undergo full malolactic conversion, and are aged for 6 months in tank before undergoing 20 months of aging sur latte, then bottled with a dosage of 7 g/l. In the glass the wine shows a light, iridescent pink color with a steady stream of tiny bubbles with aromas of crushed tart berries, chalk and roses. On the palate, the wine has a lovely, gentle acidity to match the soft, creamy mouthfeel and mousse. Flavors of salted citrus, muddled raspberry, red currant and river stones wash across the palate into an elegant and refined finish.
