The Silva Daskalaki Winery was established in 1998 in the Heraklion Prefecture, specifically in the village of Siva, part of the Protected Designation of Origin - PDO Dafnes. The name "Silva" comes from the place name Siva (si-wa), which refers to the God Siva (Dionysus) of the Hindu religion. Irini Daskalaki Xenogiannaki started the winery though the love, dedication and tradition she grew up with in these vineyards, as her family's history of winemaking goes back to 1920. Irini immediately got to work reviving the estate's ninety acres of vineyards and converted them over to organic farming. The estate grows a wide assortment of both indigenous and international varietals. For the whites: Vidiano, Muscat Spinas, Assyrtiko, Plyto, Sauvignon Blanc and Chardonnay; for the reds: Liatiko, Kotsifali, Mantilari, Syrah, Merlot, Grenache and Cabernet Sauvignon. The vines are rooted in soils that are predominantly clay mixed with calcareous rocks, loam and sand.
The Vorinos White — 100% Vidiano — pours a crystal-clear pale yellow with light bluish-green highlights. The nose is intensely aromatic with notes of citrus and white flowers. Upon your first sip, you are rewarded with flavors of citrus-tinged stone fruits intertwined with a delightful marriage of minerality and acidity. There is excellent balance and finesse to this beautiful white. A wonderful pairing with a fruit and cheese platter, but can be enjoyed with all types of seafood. Try with garlic butter shrimp skewers or pan-seared swai with mango salsa.
