Domaine Saint Amant is located in the heart of the Dentelles de Montmirail, a small mountain range that has some of the highest elevations in the southern Rhône. In fact, Saint Amant is the domaine with the highest elevation in the Rhône Valley. Owned by the Jaques Wallut family, the estate is composed of twenty different plots of land covering 32 acres, scattered on the southern and eastern flank of Mount Saint Amant, planted to a large number of Rhône varietals.
Saint Amant's Borry is a blend of 95% Viognier and 5% Roussanne grown on rocky limestone and clay terraces at an altitude of 1,500 feet. All grapes are hand-harvested and the wine is fermented in a mix of 75% stainless steel and 25% twenty-year-old oak vats. There is no malolactic fermentation. The nose is driven by stone fruits and flowers with an underlying tropical tone. On the palate the wine is soft, supple but rich with lots of freshness and substance. Enjoy on its own or with lightly prepared fish dishes.
