The secret to Hervé Fabre’s wines lies completely in the vineyard. When Fabre arrived in Argentina in 1990, he took one look at the wine industry and realized that the oldest vines were of little interest to the new money. These ancient vines might produce great wine, but the consensus was that they couldn't make money; the yields were too low and farming them was too difficult. So Hervé did what almost no one else dared, doing things in reverse. He bought up all the old-vine plantings — really old, like 100 years old — that he could find in both Mendoza and Patagonia. Then, he went about trying to make money. It took awhile, but now, almost 30 years later, as the other newer wines become more and more mundane, Hervé has hit pay dirt. These old-vines — combined with his Bordeaux training and winemaking savoir-faire — have allowed him to create Southern Hemisphere masterpieces.
Fabre Montmayou's Cabernet Franc Reserva is made from 100% Cabernet Franc. Following a manual harvest, the grapes undergo cold maceration followed by fermentation, after which 60% of the wine is aged in French oak barrels. The wine displays a beautiful ruby color and emits elegant aromas of red and black fruits with hints of mint. This Cabernet Franc is extremely well-balanced with a long finish. Enjoy with lamb, pork or game dishes.
