The Kingston family has had a presence in the Casablanca Valley of Chile since the early 1900's, when Carl John Kingston left his home in Central Mine, Michigan in search of copper and gold. Instead of finding gold, he started a large dairy and cattle ranch 12 miles from the Pacific Ocean in the western hills of the valley. Throughout the years members of the Kingston family maintained "The Farm", and then in the 1990's Courtney Kingston made the daring decision to plant cool-climate red varietals in a valley known almost exclusively for white grapes. The result was some of the best Pinot Noir and Syrah in all of Chile, as well as excellent cool-climate Sauvignon Blanc and Chardonnay. All of the vines are farmed organically and planted on their own roots.
The Kingston Cariblanco is made from 100% Sauvignon Blanc that is fermented in stainless steel and aged on the lees with some stirring in stainless steel barrels and small amounts of French oak for five months. The wine displays flavors of citrus flowers and a touch of herbs. There is a slight saline note on the finish which gives the wine an extra layer of intensity and flavor. Try this wine with lemon chicken or flounder with herb blossom butter.
