The secret to Hervé Fabre’s wines lie completely in the vineyard. When Fabre arrived in Argentina in 1990, he took one look at what was going on and realized that the oldest vines were of little interest to the new money. The yields were too low; farming was too difficult. The ancient vines might make great wine, but the consensus was that they couldn't make money! So Herve did what almost no one else dared. He did things backwards. He went about buying up all the old-vine plantings, really old, 100 years old, that he could find in both Mendoza and Patagonia. Then he went about trying to make money. It took awhile, but now, almost 20 years later, as the other newer wines become more and more mundane, Hervé has hit pay dirt. These old-vines, combined with his Bordeaux training and wine-making savoir-faire, has allowed him to create a southern-hemisphere masterpiece.
The Mendoza Reserva is made from 100% Malbec and aged in French oak for 12 months, displaying a deep red color with violet tones. It possesses a very intense bouquet dominated with red fruits—red and black cherries—and spices. This wine is complex and well balanced with notes from the oak like vanilla and chocolate. Big on the palate, the Reserva is a modern-style wine, with sweet silky tannins. A great pairing with all kinds of grilled meats, game and cheeses.
