The secret to Hervé Fabre’s wines lies completely in the vineyard. When Fabre arrived in Argentina in 1990, he took one look at the wine industry and realized that the oldest vines were of little interest to the new money. These ancient vines might produce great wine, but the consensus was that they couldn't make money; the yields were too low and farming them was too difficult. So Hervé did what almost no one else dared, doing things in reverse. He bought up all the old-vine plantings — really old, like 100 years old — that he could find in both Mendoza and Patagonia. Then, he went about trying to make money. It took awhile, but now, almost 30 years later, as the other newer wines become more and more mundane, Hervé has hit pay dirt. These old-vines — combined with his Bordeaux training and winemaking savoir-faire — have allowed him to create Southern Hemisphere masterpieces.
The Fabre Montmayou Barrel Selection Malbec from Patagonia pours a dark red color with shiny, violet tones. This is a very elegant wine with beautiful aromas of violet and liquorice on the nose. Terrifically suave in texture — round and chiseled — and packed with ripe, crushed raspberry and blackberry flavors. This wine possesses great structure with soft, silky tannins; a perfect example of true Patagonian Malbec. Enjoy with a hangar steak drizzled with a generous helping of chimichurri.
