Château Pajzos is built upon some of the greatest terroir in Tokaj, Hungary. The 70 hectares of vineyards sit on volcanic, rocky soils surrounding the famous wine village of Sárospatak and are planted to the native varietals Furmint, Muscat, Hárslevelü and Zeta. The estate is under ownership of the Laborde family, who famously own Château Clinet in Pomerol. The vineyards here are recognized as producing exceptional white wines, both dry and sweet.
The Tokaji Aszú 5 Puttonyos is a world-class dessert wine made from a blend of Furmint and Hárslevelü. Bunches of botrytised grapes are added to a dry base wine made of Furmint. The wine is aged for three years in 220 liter Hungarian oak casks — 30% of which are new — followed by three more years in steel tanks. This is one of the great treasures of the wine world: lusciously sweet with electric acidity, a great concentration of apricot, honey and marmalade flavors and incredible length, power and finesse. You can age this wine for another 20 years, although it drinks beautifully now. Incredible.
