The Paquet family has owned properties in Burgundy since the early 1950's. Agnès Paquet took over the vineyards and set up her Domaine in 2000 after completing her wine business studies in Beaune. The estate is located in the remote village of Meloisey, in the Hautes Côtes de Beaune right near the village of Auxey-Duresses. She conducts every aspect of the winemaking process, from vine to bottle. The micro-production of her wines, combined with her status as a darling of France's three Michelin Star "Somms" (from the restaurants of Alain Ducasse, Anne-Sophie Pic and Joël Robuchon) allows us to realize how lucky we are to feature these beautiful wines.
Agnès Paquet's Ali Boit Boit et les 40 Buveurs is made from 100% Aligoté in the methode ancestral for sparkling winemaking. Alternately, it could be referred to as a pet-nat. The wine is bottled before primary fermentation has finished, and the wine stops fermentation naturally in bottle, giving a wine with a slight sparkle and some sweetness. This a light and refreshing sparkler, offering inviting aromas and flavors of red and green apples mixed with notes of brioche and sweet cream. Pop the crown cap and enjoy chilled with family and friends.
