Ronsel do Sil is 10 hectare estate located in Ribeira Sacra run by Maria José Yravedra. Ribeira Sacra is one of the world's most extreme places to grow grapes: the vineyards are planted on dangerously steep slopes on old terraces built by the ancient Romans at altitudes ranging from 300-700 meters. All vineyard work must be done by hand. Maria's philosophy is based on maintaining a sincere balance with nature, through love and compromise with the land. She farms her vines as naturally as possible, utilizing biodynamic principles, composting, and sheep grazing. In the cellar, Maria practices a minimal approach with a gravity flow system, old wood and concrete for aging, and very little sulfur additions which allow the grapes to speak for themselves.
The Ronsel do Sil vel’uveyra comes from the estate’s steep, terraced vines that are between 10 and 60 years old. Vela`uveyra, which means “to gaze at the vineyards” in the local dialect, is predominately Mencía, with small amounts of Garnacha and the local Negreda (Juan García), all grown in granitic soils. The grapes are hand harvested and fermented with native yeasts in 5,000-liter oak foudres, followed by 8 months of aging in concrete. Deep purple in color with entrancing aromas of spicy dark fruit and white pepper. The palate is fresh and lively with a strong mineral core and firm, svelte tannins that lead into a refreshing and complex finish. Enjoy with a wide range of foods from paella to grilled pork shoulder steaks or beef with peppers.
