Sanctum Lisica - Pinot Noir 2022
Situated in eastern Slovenia, Sanctum is an estate located in the Stajerska wine district of the Podravje region. In the 12th century, French Carthusian monks selected the southern slopes of Klokocovnik and Lipogav for its natural beauty to establish a monastery. Today, this land is home to the vineyards of Sanctum. The cool-climate, combined with the white-marl and rocky soils, is perfect for growing grapes such as Pinot Noir, Chardonnay, Welshriesling, Traminer and Pinot Gris. All vines are planted on steep slopes with southern exposure between 100-480 meters in altitude. There is no irrigation and the estate is farmed in accordance with Slovenian integrated farming laws.
Sanctum's 100% Pinot Noir is made from hand-picked grapes that are de-stemmed and fermented for 28 days in open tanks and then aged for 18 months in old French barrels. The wine pours a light, translucent ruby color. Aromas of fresh raspberry, strawberry and Bing cherry waft from the glass mixed with a subtle warming spice. Light in body with refreshing acidity, the Sanctum Pinot Noir is energetic and flavorful, an excellent example of the varietal in this cool, continental climate. Enjoy with roasted vegetables, red-bean stew or pulled pork.
