The roots of the Fèvre family in Chablis date back to 1745 when the family worked predominantly as coopers and nurserymen. In 1923, Bernard Fèvre co-founded the co-operative La Chablisienne for which he and his son, Jacques, served as the co-op's president. For eighty years, the Fèvre family delivered their entire harvest to the co-operative, until 2003, when Jacques' son Gilles and his wife Nathalie took the reins of the estate. Gilles and Nathalie are both oenologists with degrees from the Université de Bourgogne, Dijon where they met in the late 80's. Gilles manages the vineyards, while Nathalie's work is focused in the cellar. The couple oversee 99 hectares (sustainably-farmed since 2003) with approximately 25% farmed organically. Today, their daughter, Julie, works with them at the estate after following in her parents' footsteps with her own degree from Dijon.
