Domaine Michel Juillot - Cremant de Bourgogne Rosé Brut

Founded in 1928 in Mercurey by Louis Juillot, Domaine Michel Juillot is a fourth-generation family estate whose 31 hectares extend across the Côte Chalonnaise and Côte de Beaune, with holdings in Mercurey, Rully and Aloxe-Corton, including both Premier and Grand Cru vineyards. Today, Laurent — Michel’s son — oversees the property, continuing a family tradition in Mercurey that dates back centuries. Pinot Noir accounts for roughly two-thirds of the vineyard plantings, with Chardonnay comprising the remainder, and the domaine produces some 15,000 cases annually across more than 20 appellations. Certified HVE3, the estate combines respect for the environment with meticulous hand harvesting and sorting, while Laurent's approach in the cellar emphasizes gentle, minimally interventionist winemaking designed to preserve the natural character of each appellation’s terroir.

The Crémant de Bourgogne Rosé Brut from Domaine Michel Juillot is a beautifully refined expression of sparkling Pinot Noir. Produced from Pinot planted on clayey-marly limestone and flint soils, the wine is made in the traditional method, with whole-cluster pressing and a remarkable 24 months of aging on the lees before disgorgement. This beautiful Rosé Brut displays a delicate pink hue enlivened with a stream of fine, persistent bubbles. The nose opens with an inviting freshness of red berries and crushed strawberries, followed on the palate by bright raspberry and wild strawberry flavors framed by lively acidity and a subtle mineral edge. The result is fresh, elegant and exquisitely complex, with the fruitiness of Pinot Noir balanced by a dry, mineral finish. Serve it with smoked salmon, shrimp and crab cakes, charcuterie, roast chicken with herbs or a strawberry tart with crème fraîche.
