Domaine la Taste is owned and operated by the Fontan family, one of the pioneering estates in Gascony to bottle their own wines rather than devote their entire production to Armagnac. Today, the fourth-generation estate is led by siblings Nadège and Sylvain Fontan, who have assumed stewardship from their parents, Jean-Claude and Aline. Together, they oversee every aspect of the domaine, from vineyard management to winemaking. While Armagnac remains an important part of the family's heritage, the estate's production is now focused primarily on wine, with approximately 80% dedicated to white wines, 15% to reds and just 5% to Armagnac. The vineyards are planted on the region's characteristic boulbènes soils — fine, silty alluvial clay known for producing fresh, aromatic wines with vibrant acidity. Guided by the philosophy of "feeding the soil so it can nourish future generations," Nadège and Sylvain practice regenerative, sustainable farming that emphasizes soil health, biodiversity and the long-term vitality of their vineyards.

A blend of 60% Colombard, 20% Ugni Blanc, 11% Gros Manseng, and 9% Sauvignon Blanc, the 2025 Harmonie de la Taste shines a pale gold with delicate green reflections. Expressive aromas of ripe grapefruit, white peach and spring blossoms rise from the glass, complemented by a subtle stony minerality. The palate is remarkably vibrant, delivering layers of juicy citrus and orchard fruit wrapped in a silky texture, while a delicate hint of honey adds depth without sacrificing freshness.
