Chateau Olivier is one of the oldest properties in Bordeaux — wine historians believe the estate dates back as far as the 11th century. Some ancient remnants show that Chateau Olivier is actually one of the few castles in the Bordeaux region: there is even a moat and drawbridge. Today, the estate consists of 220 hectares, though only 55 hectares are planted to vines. The rest of the estate is a mix of forests, fields, ponds and streams. The de Bethmann family has owned Château Olivier since 1866, and today Alexandre de Bethmann leads this venerable estate, one of only seven in Graves who are classified for both red and white wine.
This blend of 75% Sauvignon Blanc, 23% Sémillon and 2% Muscadelle sits a pale lemon color with green highlights. Complex notes of persimmon, dried herbs, apple and spice plume from the glass. The wine is focused and pristine with zippy acidity perfectly balanced by a creamy texture with flavors of vanilla, spice and salt to complement the bright fruit tones.
