The estate focuses exclusively on Etna's noble indigenous varieties — Carricante and Nerello Mascalese — grown in volcanic soils rich in lava, ash and sandstone that impart remarkable minerality and precision. Vineyard work is carried out by hand, with an unwavering commitment to preserving the integrity of the fruit and the unique identity of the volcano. Brilliant straw yellow with glints of green, the Rupestre Etna Bianco (100% Carricante) opens with lifted aromas of lemon zest, white peach, green apple, acacia blossom and fresh Mediterranean herbs, underpinned by a distinctive volcanic minerality. Fermented and aged for 18 months on its lees in stainless steel, the palate is vibrant and beautifully textured, balancing crisp citrus and orchard fruit with saline energy and a long, chalky finish that speaks unmistakably of Etna's treasured volcanic soils. It is a white of precision, freshness and remarkable aging potential.
