Domaine Aurore Bachelet is located in Santenay — in south of the Côte de Beaune — at the foot of Montange des Trois Croix (Three Crosses Mountain). After graduating business school and traveling abroad, Aurore Bachelet returned to her Burgundian roots and took to viticultural and oenological studies. She spent the next five years training alongside her father Vincent at his eponymous domaine. Today, Aurore crafts wines from Burgundy’s two emblematic varietals: Pinot Noir and Chardonnay. With each vintage, she strives to showcase and respect the grapes’ Burgundian identity. Sustainable farming is practiced in the vineyards and all work is conducted manually. Aurore practices minimal intervention in her winemaking, holding to the belief that great wine is made in the vineyard, where careful work is essential throughout the year. Her wines are aged in her 17th century cellar in French oak for 12 to 18 months. They are refined through regular scrupulous tastings and care, assembled in vat, then bottled.
Beautiful aromas of lemon-zested orchard fruits, hazelnuts and stony minerality plume from the glass. The palate features an expansive and broad mouthfeel with a creamy texture pierced by a firm acidity. Added elements of spice complement the mix of Bosc pear, peach and vanilla flavors, finishing with a citrus and mineral drive which provides a refreshing lift to the wine.
