It’s a shame that often in Burgundy, the caliber of a producer is measured not by their farming and winemaking, but rather, by the vineyards they own or to which they have access. Believe it or not, there are plenty of producers who make wine from Grand Cru vineyards that are not of Grand Cru quality. On the other hand, there exist many diamonds in the rough scattered throughout the Côte d’Or: producers who make outstanding wines of exceptional value from “inferior” villages or vineyard holdings. These are the producers I search for, hoping to sniff out the rising stars that go overlooked because they lack Grand Cru vineyards or holdings in the Côte d’Or’s more prestigious villages.

One of the most exciting talents I’ve found is Agnès Paquet, a young woman whose micro-production wines have earned her superstar-cult winemaker status among the top sommeliers in the best restaurants of France. She meticulously farms her vineyards throughout the Côte de Beaune in undervalued villages, like Auxey-Duresses, and crafts singular wines of exceptional value and quality that genuinely reflect their terroir. She is fighting to put these overlooked villages on the radar of Burgundy lovers with her deft touch in the vineyard and the winery and I am proud to be her ally in this battle!

 
The Sommelier's Darling
The Paquet family has owned properties in Burgundy since the early 1950's, but as the turn of the century approached, the family decided to sell their vineyards in Auxey-Duresses. Agnès, though having had no prior interest in winemaking, was determined not to see the family property sold away, purchased the property and thus, began her career as a vigneron. In 2000, she officially set up her Domaine after completing her wine business studies in Beaune. The estate is located in the remote village of Meloisey, in the Hautes-Côtes de Beaune right near the village of Auxey-Duresses. She conducts every aspect of the winemaking process, from vine to bottle, with a small team of dedicated workers. Since 2019, she has been practicing organic viticulture and will be certified for the 2021 vintage. The extremely small-scale production of her wines, combined with her status as a darling of France's three Michelin Star "Somms" (from the restaurants of Alain Ducasse, Anne-Sophie Pic and Joël Robuchon) has never allowed me the opportunity to showcase them accordingly, as I can never get enough of them. Luckily for you, that has changed.
 
Crémant de Bourgogne
Agnès' Crémant de Bourgogne is  a blend of 40% Pinot Noir, 30% Chardonnay, 20% Gamay, and 5% Aligoté made in the traditional method; it is aged for 12 months on the lees and is a blend of at least two vintages, with 20% of the blend coming from reserve wines. In the glass the wine displays a light gold color with copper highlights and a small, steady stream of bubbles. Aromas of Red and Golden Delicious apples, citrus zest, fresh bread and white flowers plume from the glass. This beautiful Crémant shows plenty of freshness and tension with notes of just-ripe red berries to compliment the citrus and orchard fruit flavors as well as a saline mineral core. The bubbles are tiny and firm on the palate which add to the wine's excellent balance and incredible purity and length. A truly refreshing and crystalline sparkler. Enjoy on its own or with a plate of fried clams, escargot or even a fish stew.
