Laurent Perrachon and Domaine des Mouilles belong to a group known as Vigneron Indépendant. This is a group of winemakers whose purpose is to represent high-standards in the wine-making process. They are responsible professionals that are, above all, respectful of tradition. It is in this tradition that Laurent farms sustainably, harvests by hand and uses traditional Burgundy wine-making techniques.

Made from 100% chardonnay, but known locally as Perle Blanche (white pearl), the wine is made from twenty-year old vines that are planted in siliceous-clay and limestone-clay soils. A beautiful gold tint beams from the glass, and a floral nose of white blossoms create a lasting first impression. This is a lighter style of chardonnay, fresh and mineral, with touches of lemon curd and citrus. The finish is crisp and clean, with wonderful minerality. This is a great wine on its own or served with fish or poultry
