The goal of the winery is to produce the highest quality wines from Spring Mountain possible – wines that rank with the finest wines of the world. To help accomplish this goal, the owners have engaged the former wine maker of Chateau Latour, Christian LeSommer, as wine consultant. Monsieur LeSommer has overseen the greatest vintages of Chateau Latour for the past several decades. He has also worked at Chateau d’Yquem and is currently working for the equally famous Chateau Lafite. Without an on site winery, small quantities of wine from 7&8 have been made under LeSommer’s direction at neighboring facilities. Until 2000, most of the grapes were under prior contractual obligations. However, it is anticipated that no more than 2500 cases annually are possible from the estate since current yields are only 1-1½ tons per acre on average.

Infertile volcanic soils, steep slopes and unique climatic conditions at this relatively high elevation all contribute to the paucity of yield. The conditions create wines of power, intensity and complexity as in no other appellation. Spring Mountain red wines have deeper color and higher tannins. The wines can be very brawny, and it takes the winemaker’s skill to convert the brawniness into elegance. Chardonnays from Spring Mountain have a long history and are like no other. These wines are big and complex and can display the extraordinary depth of character found in the wines of Puligny and Chassagne Montrachet.

Construction on the winery and aging cave for Vineyard 7 & 8, pictured above, is scheduled to begin after harvest in October of this year. The completion of a state-of -the-art winery on the Vineyard will allow us to control all of the winemaking operations to an even greater degree than before. One more step in our ”quest for perfection!

Picked by hand, whole cluster pressed and barrel fermented with weekly battonage. The wine was aged for 14 months in French oak with 100% malolactic. Bottled unfined and unfiltered.

This full bodied Chardonnay is loaded with  minerals, candied lemon, citrus oils, ripe apricots and peaches, intermixed with notes of meringue, baking flour and crushed stone and a hint of grilled almonds. Full bodied with a creamy and seamless structure, great intensity and concentration with a lengthy finish.
